I do know I say "What?" a lot, even when I've actually heard what someone just said to me.

I do too. It's such an annoying habit.

I hate it, and I really don't know why I do it. After I do it I always want to interrupt the person and tell them to just shut it I actually did hear them the first time.

When i'm writing i write it as "um" but if i'm speaking it comes out more like "eeh" or "erm" xD i guess it's different in every language.

I rarely use it when I talk, mostly when I'm nervous or shy or something. But I don't say "uhm", I say "eh" because that's what you usually say in Norway.
